So, I've been toying with this idea for a couple of weeks now. Last weekend I bought the ingredients. This weekend I made it. The idea included a muffin pan, bacon, hash browns, eggs and cheese. The results were wonderful.
First I lined the muffin tin with the bacon. My original idea was to put the hash browns in first and line the hash browns with the bacon, but I realized that the entire thing would hold together beautifully and wouldn't need to be greased if I used the bacon first. After the bacon I added the hash browns, trying the best I could to keep a little hollow in the center. I put the pan in a four hundred Fahrenheit degree oven for thirteen minutes.
While that was baking I took four eggs and added about a quarter teaspoon of ground mustard, a half a teaspoon of onion powder and a half a teaspoon of salt. (In hindsight, combined with the bacon it was way too much salt.) I whisked it all up, added some shredded cheddar and when I took the muffin pan out of the oven I spooned the egg mixture into each muffin container. I soon discovered that I should have used seven eggs instead of four, because it just wasn't enough! Not discouraged, I added just two plain eggs to one of them, and since I ran out of the mixture half-way through one of the tins, I only added one extra egg there.
Top each one with a little extra cheese and dash of paprika, throw it back in the oven for another fifteen minutes, and you have breakfast heaven. It seems to me that this would be the perfect item to make on Sunday for the coming week for breakfasts on the go.
I asked Garrick what we should call it (even though I'm positive that I can't be the only one to have had this idea) and he said, "Breakfast Cups." So there you have it folks, breakfast cups! Yum...
